Pasta with Sausage and Broccoli Rabe


Several years ago we started making pasta with broccoli rabe, garlic, and red pepper flakes and both love it. We eat it about once a month. Plus, it's super easy and quick for a weeknight.

Tonight I wanted to add some sausage. Back in the fall I made
pasta with broccoli, red peppers, and sausage. Tonight's dish was a combination of that meal and our old stand-by broccoli rabe pasta.

Ingredients
  • 1/2 lb pasta; I used linguine because it's what I had on hand, but a smaller pasta would be good too
  • 1 tbsp olive oil
  • 1 package hot Italian sausage, casings removed
  • 4 cloves garlic, sliced
  • 1 shallot, sliced
  • 1 bunch broccoli rabe, tough ends removed
  • 1/2 c chicken broth
  • Shredded Parmesan cheese

Directions

  • Boil salted water in a large pot. Add broccoli rabe and cook for 3-4 minutes. Remove and run under cold water to stop the cooking, but don't dump the water.
  • Add pasta to the water the broccoli rabe cooked in and cook until done. Drain.
  • In the meantime, heat olive oil in a large saute pan.
  • Crumble sausage into the pan and cook until cooked through.
  • Add garlic and shallots; saute 2-3 minutes.
  • Add chicken broth and stir, scraping up brown bits.
  • Add broccoli rabe and stir.
  • Add pasta and toss to coat. Add Parmesan cheese.

This is something that is so easy to pull together when you want something quick and easy with lots of flavor. Including prep time, this only took 30 minutes.
