- 3 cucumbers, quartered lengthwise and then chopped
- 1/4 of a large red onion, chopped or sliced (Next time I'll use my mandolin for super fine slices)
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 1/2 tsp dry oregano
- 1/2 tsp salt
- Dash of black pepper
- 1 tbsp fresh parsley, finely chopped
Mix olive oil, vinegar, oregano, salt, and pepper.
Pour over the cucumbers and onions and mix well.
Chill at least 2-3 hours before serving.
I don't make too many salads but this is one I'd make again. The dressing was the perfect complement to the cucumbers, and I loved the Italian seasonings in it.Print this post
